When it comes to wedding cakes, Grand Hyatt Denver Pastry Chef Sandra Adams says it succinctly: “The only trend is personal, personal, personal.” With all of the different types of cakes out there, it’s easy to be overwhelmed with choices when deciding which cake to serve on your wedding day. But don’t worry because anything goes. At Grand Hyatt Denver, we take special pride in making just what you envision come true.
Grand Hyatt Denver wedding planner Celia Smith advises that the days of the six-tier wedding cakes are not as popular right now. Most couples are now choosing smaller, three or four tiered wedding cakes with minimalist design.
Couples are straying away from the classic white cake and going bold with new and exciting flavors. Grand Hyatt pastry chef Sandra Adams echoes the change from the six classics. “Some couples choose flavors that are a touch-stone to their childhood while others take their cue from the food direction they’ve selected for the reception.” Sandra even added chocolate covered potato chips to one cake. “The bride and groom loved it,” she said. Specializing in creating unique flavors, Celia recalls a recent brown sugar pound cake with Bailey’s and toffee mascarpone and an almond cake with grapefruit mascarpone, blueberries and strawberries.
For wedding cake design, sleek and contemporary take the stage. Many couples are opting for a marble pattern cake or one with gold leaf designs. The simple choice of cascading flowers on one side continues to be a favorite although Sandra once made one couple’s storybook cake that featured love quotes they selected from great literature embedded in the frosting.
What Not to Do
- Do not freeze the top tier to eat on your one-year anniversary.
Rather than freezing your top tier, save the recipe and ask your pastry chef to make a small version on your one-year anniversary. You’ll enjoy it fresh and have extra space in your freezer all year!
- Do not smash cake in your wife or husband’s face.
Too cliché, not to mention messy!
Wedding Day Tip
Your wedding day is one of the busiest days of your life, and it’s possible you may not even have a chance to try your cake.
